TYPES OF PHASE BEHAVIOR
Monotectic systems
Binary systems for which the melting points or boiling points of the solutions of differing compositions are not lower than the melting points or boiling points of either of the components
the components have similar melting points, molecular volumes, and polymorphic forms.
An example of a monotectic binary lipid system 1-palmitoyl, 2-olyoyl, 3-stearoyl-sn-glycerol (POSt) and 1,3-stearoyl, 2-olyoyl-sn-glycerol (StOSt).
‘‘Eutectic,’’ in Greek, means ‘‘easily melted’’
a melting point or boiling point lower for the solution than that of the individual pure products in solution
Peritectics or ‘‘incongruent melting points’’
compounds that decompose upon melting into another solid instead of taking on a liquid form
