If we want to find a particular enzyme in plants, animals, and microorganisms, it is important to know in which organelle or organ
an enzyme is located. Two techniques are important for this. The organs containing a particular enzyme can be determined by
histochemical techniques (Fig. 3). As shown in Figure 3, alkaline phosphatase and polyphenol oxidase are not distributed
uniformly in cells of porcine logissimus muscle and the beet, respectively. These sensitive enzyme histochemical techniques are
used routinely by medical and veterinary histologists and pathologists [100]. Unfortunately, they are rarely used by food
scientists.
